Mango Black Bean Salsa
1 can (541mls) black beans, drained and rinsed
1 diced mango
1/2 cup (125mls) diced red onion
1/4 cup (60mls) lemon juice
2 tbsp (30mls) vegetable oil
Toss with 1/4 cup (60mls) chopped cilantro if you wish. Chill before serving.
